The Bream and the Pumpkin
Sea Bass is a staple at Yours Bistrô. Like other dishes on our menu, it also underwent some changes. Initially, the bream was grilled with half-moon potatoes, sautéed, and subsequently cooked. It was accompanied with kale and carrot.
Now the bream is filleted because most of our customers are foreigners and, as such, they are not used to handling the whole fish.
Preparation Time: 45 min
- 1 Golden Bream
- White Rape small
- Purple Rape smal
- 1kg Pumpkin
- 6 Carrots small
Put the baby vegetables in water and salt and let cook for about 4 minutes.
Step 2. Pumpkin puree
- In a tray, put the sliced pumpkin evenly, with butter and thyme.
- Take it to the oven, at a 200ºC, during 45 minutes.
- Grind it after it’s roasted.
In a sauté, put some olive oil and heat it well. After, place the golden bream fillet with some skin under it, reduce the flame and cook it slowly.
Heat the carrot puree and sautée them vegetables.
In a plate put the puree in form of a tear (2x), place the bream and vegetables harmoniously e sprinkle it with a thin thread of balsamic vinegar around it.
