CAULIFLOWER CREAM SOUP
There are millions of soup possibilities out there, but we needed something thicker and equally creamy. We at YOURS opted for Cauliflower Cream Soup, which is very common in Anglo-Saxon countries but unusual in Portugal. However, we added a very Portuguese twist – ham.

Preparation Time: 20 min
- 500g Cauliflower
- 50g Prosciutto
- Plenty Black Truffle Olive
- Plenty Thyme
- 200ml milk
In a large mixing bowl cook the cauliflower, along with the thyme, milk and salt.
Blend and pass throught a chinois strainer.
Pour the cream into the dish. Put the prosciutto and, around, sprinkle it with the black truffle oil.
